Ingredients

  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil
  • 1/2 cup almond milk
  • 1 cup fresh strawberries, chopped
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the all-purpose flour, granulated sugar, baking powder, and salt in a large bowl.
  3. Cut in the coconut oil until the mixture resembles coarse crumbs.
  4. Mix together the almond milk and vanilla extract in a separate bowl.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined; gently fold in the chopped strawberries.
  6. Turn the dough out onto a lightly floured surface and knead gently until it comes together.
  7. Pat the dough into a circle about 1 inch thick.
  8. Cut the dough into wedges using a sharp knife or pizza cutter.
  9. Place the scone wedges on a baking sheet lined with parchment paper.
  10. Bake for 15-20 minutes until lightly golden.
  11. Cool slightly before serving.
