- 1/2 cup almond milk
- 1 cup fresh strawberries, chopped
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the all-purpose flour, granulated sugar, baking powder, and salt in a large bowl.
- Cut in the coconut oil until the mixture resembles coarse crumbs.
- Mix together the almond milk and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients and mix until just combined; gently fold in the chopped strawberries.
- Turn the dough out onto a lightly floured surface and knead gently until it comes together.
- Pat the dough into a circle about 1 inch thick.
- Cut the dough into wedges using a sharp knife or pizza cutter.
- Place the scone wedges on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until lightly golden.
- Cool slightly before serving.
