Instructions
- Cook the pasta: Start by boiling water in a large pot. Once the water is boiling, add the pasta and cook according to the package instructions. When finished, drain the pasta and set it aside.
- Heat the skillet: In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the minced garlic and sauté for about 1 minute, just until it becomes fragrant.
- Cook the shrimp: Add the peeled and deveined shrimp to the skillet. Cook the shrimp for about 3-4 minutes, or until they turn pink and opaque. Stir occasionally to ensure they cook evenly.
- Add the vegetables: Now, toss in the sliced bell peppers, zucchini, and halved cherry tomatoes. Continue to cook for another 5-7 minutes until the vegetables are tender but still have a bit of crunch.
- Combine with pasta: Pour in the vegetable broth and add the cooked pasta to the skillet. Mix everything well, ensuring that the pasta is coated with the oil, broth, and juices from the shrimp and vegetables.
- Season: Finally, season the dish with salt and pepper to taste. Stir again to combine all ingredients nicely.
