- 1 pound shrimp, peeled and deveined
- 1 cup couscous
- 2 cups chicken or vegetable broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- Juice of 1 lemon
- 2 tablespoons parsley, chopped
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions
- Heat the skillet: In a large skillet, heat the olive oil over medium heat.
- Cook the garlic and paprika: Add the minced garlic and smoked paprika to the skillet. Sauté for about 1 minute.
- Add the shrimp: Next, add the shrimp to the skillet. Season them with salt and pepper. Cook until pink, about 3-4 minutes.
- Sauté the vegetables: In the same skillet, add the broccoli and tomatoes. Sauté for about 3-4 minutes until tender.
- Cook the couscous: Stir in the couscous and pour in the broth. Bring to a boil, then reduce heat, cover, and simmer for 5 minutes.
- Fluff the couscous: Remove from heat, fluff with a fork, and stir in lemon juice and parsley.
- Fold in the shrimp and feta: Gently fold in the shrimp and feta cheese.
- Serve warm: Enjoy the vibrant colors and flavors.
