Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup couscous
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Juice of 1 lemon
  • 2 tablespoons parsley, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. Heat the skillet: In a large skillet, heat the olive oil over medium heat.
  2. Cook the garlic and paprika: Add the minced garlic and smoked paprika to the skillet. Sauté for about 1 minute.
  3. Add the shrimp: Next, add the shrimp to the skillet. Season them with salt and pepper. Cook until pink, about 3-4 minutes.
  4. Sauté the vegetables: In the same skillet, add the broccoli and tomatoes. Sauté for about 3-4 minutes until tender.
  5. Cook the couscous: Stir in the couscous and pour in the broth. Bring to a boil, then reduce heat, cover, and simmer for 5 minutes.
  6. Fluff the couscous: Remove from heat, fluff with a fork, and stir in lemon juice and parsley.
  7. Fold in the shrimp and feta: Gently fold in the shrimp and feta cheese.
  8. Serve warm: Enjoy the vibrant colors and flavors.
