  • 1 1/2 tablespoons (4.5 grams) Key lime zest
  • 1/2 cup (120 grams) fresh Key lime juice
  • 4 large egg yolks (74 grams)
  • 1/2 teaspoon (2 grams) vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups (360 grams) cold heavy whipping cream
  • 6 tablespoons (42 grams) confectioners’ sugar
  • 1/2 teaspoon (2 grams) vanilla extract
  • Garnish: Key lime slices

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the graham cracker crumbs, sugar, and kosher salt.
  3. Pour in the melted butter and stir until evenly moistened.
  4. Press this mixture into a 9-inch pie plate to form the crust.
  5. Bake the crust for 8 to 10 minutes, or until lightly golden. Remove and let cool.
  6. Whisk together the sweetened condensed milk, Key lime zest, Key lime juice, egg yolks, and vanilla extract until smooth.
  7. Pour this filling into the cooled crust, spreading it out evenly.
  8. Bake the pie at 350°F (175°C) for 10 to 12 minutes, or until set but slightly jiggly in the center.
  9. Cool the pie at room temperature for about 30 minutes.
  10. Chill in the refrigerator for at least 2 hours to firm up.
  11. Beat the cold heavy whipping cream until it thickens.
  12. Add the confectioners’ sugar and vanilla extract, continuing to beat until soft peaks form.
  13. Spread the whipped cream on top of the filling.
  14. Garnish with fresh Key lime slices.

Notes

Use fresh Key limes for best flavor; chill the pie for at least two hours for the best texture.
