- 1.5 cups graham cracker crumbs
- 6 tablespoons salted butter (melted)
- 0.33 cup granulated sugar
- 1 can sweetened condensed milk (14-ounce)
- 5 large egg yolks
- 0.5 cup fresh key lime juice
- 2 tablespoons key lime zest
- Powdered sugar (for dusting, optional)
- 2 tablespoons key lime and/or lemon zest (for topping, optional)
Instructions
- Preheat the oven to 375°F (190°C) and prepare an 8 or 9-inch baking pan.
- Combine the graham cracker crumbs, melted butter, and granulated sugar in a medium bowl.
- Press the mixture into the bottom of the pan and bake for about 7 minutes.
- Lower the oven temperature to 350°F (175°C) and whisk together the sweetened condensed milk, egg yolks, fresh key lime juice, and key lime zest.
- Pour the filling over the cooled crust and spread evenly.
- Bake for about 25 minutes until the filling is set but slightly jiggly.
- Allow to cool at room temperature, then refrigerate for 2 to 3 hours.
- Dust with powdered sugar before serving, if desired.
Notes
Serve chilled for best flavor and texture. Great with whipped cream or fresh fruit.
