- 8 oz Neufchatel cheese (softened)
- ¼ cup Greek yogurt
- ¼ cup maple syrup
- Pinch sea salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking pan.
- Combine grated carrots, eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract in a large mixing bowl.
- Mix the oat flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and sea salt in another bowl.
- Add the dry mixture to the wet mixture gradually, stirring gently until just combined.
- Pour the batter into the prepared baking pan and bake for 20 to 25 minutes.
- Cool the cake completely in the pan before frosting.
- Mix softened Neufchatel cheese, Greek yogurt, maple syrup, and a pinch of sea salt for the frosting.
- Spread the frosting evenly over the cooled cake.
- Serve as a dessert, breakfast, or healthy snack.
