- 8 oz orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup vegetable or chicken broth
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Cook the orzo pasta according to the package instructions. Once it’s ready, drain the pasta and set it aside.
- Heat a large skillet with 2 tablespoons of olive oil over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Cook the shrimp for 3–4 minutes until they turn pink.
- Add fresh spinach and cook until wilted, about 1–2 minutes.
- Combine the cooked orzo and broth, mixing everything well.
- Season with salt and pepper to taste.
- Serve hot, garnished with lemon wedges.
Notes
Don’t overcook the shrimp; use fresh ingredients for the best flavor.
