Description

A quick and delicious shrimp and spinach orzo dish perfect for busy weeknights.


Ingredients

  • 8 oz orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup vegetable or chicken broth
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Cook the orzo pasta according to the package instructions. Once it’s ready, drain the pasta and set it aside.
  2. Heat a large skillet with 2 tablespoons of olive oil over medium heat.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Cook the shrimp for 3–4 minutes until they turn pink.
  5. Add fresh spinach and cook until wilted, about 1–2 minutes.
  6. Combine the cooked orzo and broth, mixing everything well.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with lemon wedges.

Don’t overcook the shrimp; use fresh ingredients for the best flavor.
