- 8–10 flour tortillas (medium size)
- 3 cups cooked shredded chicken (rotisserie works great)
- 2 cups shredded Monterey Jack cheese (divided)
- 1 cup shredded cheddar cheese (divided)
- 1/2 cup diced green chiles (canned or fresh)
- 1/4 cup chopped fresh cilantro
- 1 small onion (diced)
- 3 tablespoons butter (for white sauce)
- 3 tablespoons all-purpose flour (for roux)
- 2 cups chicken broth (for white sauce)
- 1 cup sour cream (room temperature)
- 1/2 teaspoon cumin (ground)
- Salt and pepper to taste
Instructions
- Make the White Sauce: Start by melting the butter in a large saucepan over medium heat. Once melted, add the flour and whisk for about 1 minute to create a roux. Gradually pour in the chicken broth while continuing to whisk until thickened and creamy. Stir in the sour cream, cumin, salt, and pepper. Remove from heat.
- Prepare the Filling: In a large bowl, combine the shredded chicken, diced onion, green chiles, cilantro, and 1 cup of Monterey Jack cheese. Mix until well combined.
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Assemble the Enchiladas: Spread a thin layer of white sauce on the bottom of a greased baking dish. Scoop about 1/4 cup of the chicken mixture onto each tortilla, roll tightly, seam-side down, and place in the baking dish.
- Add the Sauce and Cheese: Pour the remaining white sauce over the enchiladas and sprinkle the remaining cheese on top.
- Bake: Place the baking dish in the preheated oven and bake uncovered for 25-30 minutes until bubbling and golden brown.
- Rest and Serve: Let the enchiladas rest for about 5 minutes before serving.
Notes
Use rotisserie chicken for convenience and flavor. Allow sour cream to come to room temperature for a smoother sauce.
