- 2 cups orzo pasta
- 1 lb chicken breast, diced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Cook the orzo pasta according to the package instructions until al dente (about 8-10 minutes). Drain and set aside.
- Sauté onions and garlic in olive oil over medium heat until the onion is translucent (3-5 minutes).
- Cook the diced chicken in the skillet until browned and cooked through (6-8 minutes).
- Add the fresh spinach and cook until it wilts (2-3 minutes).
- Make the cream sauce by pouring heavy cream into the skillet and allowing it to simmer.
- Combine the cooked orzo with the skillet mixture and season with salt and pepper to taste.
- Serve warm, garnished with freshly grated Parmesan cheese.
Notes
Can serve with a light salad or garlic bread. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
