- 2 tablespoons sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- Prepare the dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Make sure all the dry ingredients are well combined.
- Mix the wet ingredients: In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until completely blended.
- Combine wet and dry ingredients: Pour the wet mixture into the dry mixture. Stir gently with a spatula or wooden spoon until just blended. Do not over-mix; it is okay if the batter is a little lumpy.
- Heat the pan: Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or a little butter.
- Cook the pancakes: Pour about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface of the pancakes, about 2-3 minutes. Flip them over and cook for another 2 minutes or until golden brown.
- Repeat: Continue this process with the remaining batter, greasing the pan as needed.
- Serve hot: Stack the pancakes on a plate, and add your favorite toppings like syrup, whipped cream, fruits, or nuts.
Notes
Don’t overmix the batter and let it rest for about 5 minutes for fluffiness. Experiment with flavors by adding spices or chocolate chips.
