Description

A delightful treat that perfectly balances tart and sweet flavors with a buttery crust and tangy lemon filling.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup granulated sugar (for filling)
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 teaspoon baking powder
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing it.
  3. In a mixing bowl, cream together the softened unsalted butter and 1/2 cup of granulated sugar until light and fluffy.
  4. Gradually add in the all-purpose flour and 1/4 teaspoon of salt, stirring until a dough forms.
  5. Press the dough evenly into the bottom of the prepared baking pan.
  6. Bake for about 20 minutes or until light golden brown.
  7. While the crust bakes, whisk together the eggs, 1 cup of granulated sugar, lemon zest, lemon juice, and 1/4 teaspoon of baking powder in a separate bowl.
  8. After the crust has pre-baked, pour the lemon filling over it, spreading it evenly.
  9. Return the pan to the oven and bake for an additional 20-25 minutes.
  10. Once baked, remove from the oven and cool completely on a wire rack.
  11. Dust the cooled bars generously with powdered sugar, cut into squares, and serve.
