Description

A delicious and healthy twist on classic banana bread, combining ripe bananas, dark chocolate, and protein powder for a nutritious snack or breakfast.


Ingredients

  • 3 large ripe bananas, mashed
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • ¼ cup melted coconut oil or light olive oil
  • 1 teaspoon vanilla extract
  • 1½ cups whole wheat flour
  • ⅓ cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • ½ cup dark chocolate chips
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9 x 5 inch loaf pan by greasing it and optionally lining it with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Add the eggs, maple syrup (or honey), melted coconut oil, and vanilla extract to the bananas and whisk together.
  5. Mix the whole wheat flour, protein powder, baking soda, baking powder, ground cinnamon, and sea salt in a separate bowl.
  6. Combine the dry ingredients into the wet banana mixture until just combined.
  7. Fold in the dark chocolate chips and nuts if using.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 50 to 55 minutes or until a toothpick comes out clean.
  10. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.

Notes

Enjoy with peanut butter or almond butter for a protein boost. Pairs well with coffee or tea.
