- 3 large ripe bananas, mashed
- 2 large eggs
- ⅓ cup maple syrup or honey
- ¼ cup melted coconut oil or light olive oil
- 1 teaspoon vanilla extract
- 1½ cups whole wheat flour
- ⅓ cup vanilla or unflavored protein powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon fine sea salt
- ½ cup dark chocolate chips
- ¼ cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9 x 5 inch loaf pan by greasing it and optionally lining it with parchment paper.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add the eggs, maple syrup (or honey), melted coconut oil, and vanilla extract to the bananas and whisk together.
- Mix the whole wheat flour, protein powder, baking soda, baking powder, ground cinnamon, and sea salt in a separate bowl.
- Combine the dry ingredients into the wet banana mixture until just combined.
- Fold in the dark chocolate chips and nuts if using.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50 to 55 minutes or until a toothpick comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
Notes
