Description

A comforting oven-baked chicken and rice casserole that’s perfect for weeknights and gatherings. It combines tender chicken, fluffy rice, creamy soup, and melted cheese for a delightful meal.


Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 1 cup cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen mixed vegetables (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked rice, shredded chicken, cream of chicken soup, chicken broth, shredded cheese, and optional mixed vegetables in a large mixing bowl.
  3. Sprinkle in the garlic powder, onion powder, salt, and pepper, and stir until well mixed.
  4. Grease your baking dish and pour the mixture into it, spreading evenly.
  5. Sprinkle breadcrumbs on top, if desired.
  6. Bake for 30-35 minutes or until bubbly and golden brown.
  7. Cool for a few minutes before serving.
