Description

A creamy and delicious Broccoli Cheddar Soup, perfect for weeknight dinners and packed with healthy vegetables.


Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: croutons for topping

Instructions

  1. Melt the butter over medium heat in a large pot. Add the chopped onion and minced garlic; sauté until softened, about 4-5 minutes.
  2. Add the broccoli florets and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Cook until the broccoli is tender, about 10-15 minutes.
  3. Use an immersion blender to puree the soup until smooth, or leave it chunkier if preferred.
  4. Stir in the milk or cream and bring the soup back to a gentle simmer.
  5. Add the shredded cheddar cheese and stir until melted and fully combined. Season with salt and pepper to taste.
  6. Serve hot, topped with croutons if desired.

Notes

For a spicier version, add red pepper flakes or diced jalapeños.
