- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk or cream
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: croutons for topping
Instructions
- Melt the butter over medium heat in a large pot. Add the chopped onion and minced garlic; sauté until softened, about 4-5 minutes.
- Add the broccoli florets and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Cook until the broccoli is tender, about 10-15 minutes.
- Use an immersion blender to puree the soup until smooth, or leave it chunkier if preferred.
- Stir in the milk or cream and bring the soup back to a gentle simmer.
- Add the shredded cheddar cheese and stir until melted and fully combined. Season with salt and pepper to taste.
- Serve hot, topped with croutons if desired.
Notes
For a spicier version, add red pepper flakes or diced jalapeños.
