Description

Ingredients

  • 2 tsp baking powder

  • ½ tsp salt
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream (or plain Greek yogurt)
  • 1½ cups fresh or frozen blueberries (do not thaw if frozen)
  • 1 tbsp flour (to coat blueberries)
  • ½ cup light brown sugar (packed)
  • ½ cup all-purpose flour (for crumb topping)
  • 1 tsp ground cinnamon
  • ¼ cup unsalted butter (melted, for crumb topping)
  • ½ cup powdered sugar (optional glaze)
  • 12 tbsp milk or cream (optional glaze)
  • ¼ tsp vanilla extract (optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking pan.
  2. Prepare the crumb topping by mixing brown sugar, flour, and cinnamon with melted butter until crumbly.
  3. Combine dry ingredients: whisk flour, baking powder, baking soda, and salt in a medium bowl.
  4. Cream the softened butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Mix in the vanilla extract.
  7. Alternate adding the dry mixture and sour cream, being careful not to over-mix.
  8. Prepare the blueberries by tossing them with 1 tablespoon of flour.
  9. Fold in the blueberries gently into the batter.
  10. Pour the batter into the prepared pan and spread it evenly.
  11. Add the crumb topping over the batter.
  12. Bake for 40-45 minutes or until a toothpick comes out clean.
  13. Cool the cake in the pan for about 20 minutes before serving.

Notes

Serve warm or at room temperature. Pairs well with coffee or tea. For a treat, top with whipped cream or ice cream.
