Description

A delightful bowl featuring lean ground beef, roasted sweet potatoes, avocado, and cottage cheese, drizzled with hot honey for a unique twist.


Ingredients

  • 1 lb lean ground beef (93% lean recommended)
  • 2 medium sweet potatoes, peeled and cut into small cubes
  • 1 ripe avocado, thinly sliced
  • 1 cup cottage cheese (use low-fat or full-fat as preferred)
  • 1 medium yellow onion, finely chopped
  • 2 tbsp olive oil, divided
  • 1 packet taco seasoning (or about 2 tbsp homemade taco mix)
  • 2 tbsp hot honey (store-bought or homemade)
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cinnamon
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with 1 tablespoon of olive oil, smoked paprika, garlic powder, cinnamon, and a pinch of salt and pepper.
  3. Spread sweet potatoes in a single layer on a baking sheet and roast for about 40-45 minutes, flipping halfway through.
  4. Warm the remaining tablespoon of olive oil in a skillet over medium heat, then add the chopped onion and sauté until soft.
  5. Add the ground beef to the skillet and break it into small pieces as it cooks.
  6. Sprinkle taco seasoning over the beef, adding a splash of water if needed, and let it simmer until well browned.
  7. Assemble the bowls by dividing roasted sweet potatoes and seasoned beef into serving bowls.
  8. Add sliced avocado and cottage cheese alongside the beef and potatoes.
  9. Drizzle hot honey over each bowl to taste.
  10. Garnish with cilantro, lime, red pepper flakes, or scallions if desired.
