Description

A comforting and delicious lobster pot pie filled with rich flavors, creamy sauce, and flaky crust, perfect for special occasions.


Ingredients

  • 1 lb lobster meat, cooked and chopped
  • 1 cup heavy cream
  • 1 cup chicken or seafood broth
  • 1 cup frozen peas and carrots
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup flour
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 pie crust
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Once melted, add the chopped onion and minced garlic. Sauté until the onion is soft and translucent.
  3. Stir in the flour and cook for 1 minute. Then, slowly add the chicken or seafood broth and heavy cream. Whisk until smooth and creamy.
  4. Add the chopped lobster meat, frozen peas and carrots, thyme, salt, and pepper. Cook for about 5 minutes until it thickens slightly.
  5. Take a pie dish and line it with one pie crust. Pour the lobster filling into the crust.
  6. Cover the filling with the second pie crust, sealing the edges well. Cut slits in the top crust.
  7. Brush the top with the beaten egg.
  8. Place the pie in the oven and bake for 25-30 minutes or until golden brown.
  9. Once baked, let it cool for a few minutes before serving.

Notes

Can be stored in the refrigerator for 2-3 days or frozen for up to 2 months before baking.
