- 1 lb lobster meat, cooked and chopped
- 1 cup heavy cream
- 1 cup chicken or seafood broth
- 1 cup frozen peas and carrots
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/4 cup flour
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 pie crust
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat. Once melted, add the chopped onion and minced garlic. Sauté until the onion is soft and translucent.
- Stir in the flour and cook for 1 minute. Then, slowly add the chicken or seafood broth and heavy cream. Whisk until smooth and creamy.
- Add the chopped lobster meat, frozen peas and carrots, thyme, salt, and pepper. Cook for about 5 minutes until it thickens slightly.
- Take a pie dish and line it with one pie crust. Pour the lobster filling into the crust.
- Cover the filling with the second pie crust, sealing the edges well. Cut slits in the top crust.
- Brush the top with the beaten egg.
- Place the pie in the oven and bake for 25-30 minutes or until golden brown.
- Once baked, let it cool for a few minutes before serving.
Notes
Can be stored in the refrigerator for 2-3 days or frozen for up to 2 months before baking.
