  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven: Start by preheating your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them with butter and lightly flouring them.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Mix well until all the dry ingredients are fully combined.
  3. Combine wet ingredients: In another bowl, beat together the vegetable oil and eggs until they are smooth and well combined. Then, stir in the grated carrots and crushed pineapple.
  4. Combine wet and dry ingredients: Gradually add the dry ingredient mixture to the wet ingredients. Mix until just combined, being careful not to over-mix. If you like nuts, fold in the chopped walnuts or pecans at this stage.
