Ingredients
1 lb ground beef
1 packet taco seasoning
2 tbsp water
1/2 cup ranch dressing
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 can refrigerated biscuit dough or phyllo cups (for base)
1/2 cup diced tomatoes
1/4 cup chopped green onions
Sour cream and fresh cilantro for garnish
Instructions
1. Preheat oven to 375°F (190°C) and grease a mini muffin tin.
2. In a skillet, cook ground beef over medium heat until browned. Drain any excess grease.
3. Add taco seasoning and water; stir to combine and simmer for 2–3 minutes.
4. Remove from heat and stir in ranch dressing.
5. Flatten biscuit dough pieces slightly and press them into each muffin cup to form mini shells.
6. Spoon beef mixture evenly into the cups.
7. Top with a blend of cheddar and Monterey Jack cheese.
8. Bake for 10–12 minutes, until the biscuits are golden and cheese is melted.
9. Remove from oven and top with diced tomatoes, green onions, and a dollop of sour cream.
10. Sprinkle with chopped cilantro before serving.
Notes
For a spicy kick, add diced jalapeños or pepper jack cheese.
Substitute ground turkey or chicken for a lighter option.
