Ingredients

  • 1 cup mashed ripe bananas
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • Banana pudding mix
  • Whipped cream (for topping)
  • Crushed vanilla wafers (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the mashed bananas and vanilla extract.
  5. Mix the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Combine the dry mixture with the banana mixture, alternating with the buttermilk.
  7. Fill cupcake liners about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes, then transfer to a wire rack.
  10. Fill each cupcake with banana pudding.
  11. Top with whipped cream and sprinkle crushed vanilla wafers.
  12. Serve and enjoy!
