- 1/2 cup strawberry Jello mix
- 1 cup fresh strawberries, chopped

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Add in the egg and vanilla extract, mixing until well combined.
- Mix the all-purpose flour, baking powder, baking soda, salt, and strawberry Jello mix in another bowl.
- Combine the dry ingredients with the wet mixture gently until just combined.
- Fold in the chopped fresh strawberries into the cookie dough.
- Drop spoonfuls of the dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes until lightly golden around the edges.
- Cool slightly on the baking sheet before transferring to a wire rack.
- Serve topped with whipped cream if desired.
Notes
