Ingredients
- Fresh strawberries
- Sweet rice (sushi rice)
- Cream cheese
- Sugar
- Vanilla extract
- Nori sheets (seaweed)
Instructions
- Cook the sweet rice according to package instructions and let it cool to room temperature.
- Mix cream cheese, sugar, and vanilla extract in a bowl until smooth.
- Lay a nori sheet shiny side down on a clean surface.
- Using wet hands, spread a thin layer of cooled rice evenly over the nori, leaving an inch at the top edge free.
- Slice strawberries and place them over the rice.
- Spread the cream cheese mixture over the strawberries.
- Roll the sushi tightly using a bamboo mat, wetting the edge slightly to seal the roll.
- Slice the sushi into bite-sized pieces with a wet knife.
- Serve immediately or refrigerate in an airtight container for later.
Notes
Serve with whipped cream or a scoop of vanilla ice cream. Best enjoyed fresh.
