- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup sugar (for topping)
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (160°C).
- Combine the graham cracker crumbs and melted butter in a mixing bowl.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese until smooth, then gradually add in sugar and vanilla.
- Add the eggs one at a time, mixing well after each.
- Pour the filling over the crust in the springform pan.
- Bake for 55-60 minutes until the center is set but still jiggles slightly.
- Cool the cheesecake at room temperature before refrigerating.
- Mix strawberries with sugar and lemon juice, let sit for 10 minutes.
- Spread the strawberry mixture over the cooled cheesecake.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
For best results, use room temperature ingredients and don’t overmix. A water bath can help prevent cracks.
