Description

Delightful strawberry cupcakes filled with creamy cheesecake and topped with whipped cream, fresh strawberries, and white chocolate chunks.


Ingredients

  • 1 box strawberry cake mix
  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar (for frosting)
  • Fresh strawberries, for topping
  • White chocolate, for chunks

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Mix the strawberry cake mix, eggs, water, and vegetable oil in a large mixing bowl until well combined, about 2 minutes.
  3. Fill the cupcake liners about 2/3 full with the batter.
  4. Bake for 18-20 minutes, checking for doneness with a toothpick.
  5. Prepare the cheesecake filling by beating the softened cream cheese, 1/4 cup powdered sugar, and vanilla extract until smooth.
  6. Fill each cooled cupcake center with the cheesecake mixture.
  7. Make the whipped cream by whipping heavy cream and remaining powdered sugar until stiff peaks form.
  8. Frost each cupcake with the whipped cream.
  9. Garnish with fresh strawberries and white chocolate chunks.
