- 1 ½ cups graham cracker crumbs
- 6 tablespoons melted butter
- ¼ cup granulated sugar
- 16 oz full-fat cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups fresh strawberries, sliced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (163°C).
- Prepare the pan by lining an 8×8-inch pan with parchment paper.
- Make the crust by combining the graham cracker crumbs, melted butter, and ¼ cup of granulated sugar in a medium bowl.
- Press the mixture evenly into the bottom of the prepared pan.
- Bake the crust in the preheated oven for 8–10 minutes.
- Prepare the cheesecake filling by beating the softened cream cheese until smooth, then adding the ½ cup of sugar, eggs, and vanilla extract.
- Combine the cheesecake mixture over the cooled crust and smooth the top.
- Toss the sliced strawberries with 2 tablespoons of sugar and lemon juice in a separate bowl.
- Spoon the strawberry mixture over the cheesecake layer.
- Bake again for 35–40 minutes.
- Cool completely at room temperature, then chill in the refrigerator for at least 4 hours.
