Description

Delicious and easy-to-make cheesecake bars with a fresh strawberry topping, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons melted butter
  • ¼ cup granulated sugar
  • 16 oz full-fat cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh strawberries, sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare the pan by lining an 8×8-inch pan with parchment paper.
  3. Make the crust by combining the graham cracker crumbs, melted butter, and ¼ cup of granulated sugar in a medium bowl.
  4. Press the mixture evenly into the bottom of the prepared pan.
  5. Bake the crust in the preheated oven for 8–10 minutes.
  6. Prepare the cheesecake filling by beating the softened cream cheese until smooth, then adding the ½ cup of sugar, eggs, and vanilla extract.
  7. Combine the cheesecake mixture over the cooled crust and smooth the top.
  8. Toss the sliced strawberries with 2 tablespoons of sugar and lemon juice in a separate bowl.
  9. Spoon the strawberry mixture over the cheesecake layer.
  10. Bake again for 35–40 minutes.
  11. Cool completely at room temperature, then chill in the refrigerator for at least 4 hours.
