Instructions
- Prepare the Crust: Preheat your oven to 325°F (160°C). In a large mixing bowl, combine the crushed graham crackers, 1/2 cup of sugar, and melted butter. Mix until well combined.
- Form the Crust: Press the mixture firmly into the bottom of a 9-inch springform pan.
- Make the Cheesecake Filling: In another bowl, beat the softened cream cheese until completely smooth.
- Add Sugar and Vanilla: Mix in 1 cup of sugar and 1 teaspoon of vanilla extract until smooth.
- Incorporate the Eggs: Add the eggs one at a time, mixing well after each addition.
- Add Sour Cream: Stir in the sour cream until smooth and creamy.
- Assemble the Cheesecake: Pour the cream cheese mixture over the prepared crust in the springform pan.
- Bake the Cheesecake: Bake for about 60 minutes, or until set but slightly jiggly in the center.
- Cool Down: Turn off the oven and let the cheesecake cool inside for about 1 hour.
- Chill the Cheesecake: Refrigerate for at least 4 hours or preferably overnight.
- Prepare the Strawberry Topping: Toss fresh strawberries with 2 tablespoons of sugar and let sit for about 10 minutes.
