Ingredients
6 cups fresh baby spinach
2 cups strawberries, sliced
1/4 red onion, thinly sliced
1/4 cup feta or goat cheese, crumbled
1/4 cup sliced almonds or pecans, toasted
1 avocado, sliced
**Poppyseed Dressing:**
1/4 cup olive oil
2 tbsp apple cider vinegar
1 tbsp honey
1 tsp Dijon mustard
1 tsp poppy seeds
Salt and pepper to taste
Instructions
1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper until well blended.
2. In a large salad bowl, combine spinach, sliced strawberries, red onion, avocado, and cheese.
3. Sprinkle toasted nuts over the top.
4. Drizzle dressing over the salad just before serving.
5. Toss gently to coat evenly and serve immediately.
Notes
Add grilled chicken or shrimp for extra protein.
Try substituting blueberries or mandarin oranges for a fun twist.
Make it vegan by using maple syrup instead of honey and skipping the cheese.
