Ingredients

  • 2 cups (300 g) fresh strawberries, sliced
  • 1/2 cup (60 g) sliced almonds, toasted
  • 1/4 cup (30 g) crumbled feta cheese
  • 1/4 cup (40 g) thinly sliced red onion
  • 1/4 cup (60 ml) olive oil
  • 2 tablespoons (30 ml) apple cider vinegar
  • 2 tablespoons (25 g) granulated sugar
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toast the sliced almonds on a baking sheet for about 5-7 minutes until golden and fragrant.
  3. Prepare the dressing by whisking together the olive oil, apple cider vinegar, sugar, Dijon mustard, poppy seeds, salt, and black pepper in a medium bowl.
  4. Wash the spinach and spin dry; slice the strawberries and red onion.
  5. Combine the spinach, strawberries, red onion, toasted almonds, and feta cheese in a large bowl.
  6. Dress the salad with the prepared dressing and toss gently.
  7. Serve immediately for optimal freshness and flavor.

Notes
