Description

Healthy and delicious Spinach and Garlic Meatballs that offer a protein-rich twist on traditional meatballs.


Ingredients

  • 1 pound ground meat (beef, turkey, or chicken)
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large bowl, combine the ground meat, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper.
  2. Mix until well combined, preferably using hands for even mixing.
  3. Form the mixture into meatballs, about 1-2 inches in diameter, ensuring they hold their shape.
  4. Heat olive oil in a skillet over medium heat, coating the bottom of the pan.
  5. Add meatballs to the skillet, being careful not to overcrowd the pan.
  6. Cook until browned on all sides and cooked through, about 10-12 minutes.
  7. Serve over whole-grain pasta or zucchini noodles for a lower-carb option.

Notes

For best flavor, use fresh spinach. Adjust the seasoning based on personal preference. You can also bake the meatballs at 400°F (200°C) for a healthier option.
