- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large bowl, combine the ground meat, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper.
- Mix until well combined, preferably using hands for even mixing.
- Form the mixture into meatballs, about 1-2 inches in diameter, ensuring they hold their shape.
- Heat olive oil in a skillet over medium heat, coating the bottom of the pan.
- Add meatballs to the skillet, being careful not to overcrowd the pan.
- Cook until browned on all sides and cooked through, about 10-12 minutes.
- Serve over whole-grain pasta or zucchini noodles for a lower-carb option.
Notes
For best flavor, use fresh spinach. Adjust the seasoning based on personal preference. You can also bake the meatballs at 400°F (200°C) for a healthier option.
