Description

A creamy and crunchy Southern Potato Salad perfect for picnics and gatherings.


Ingredients

  • 2 pounds potatoes
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup celery, diced
  • 1/2 cup red onion, diced
  • 3 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Boil the potatoes: Place the potatoes in a large pot, fill with cold water, add salt, and bring to a boil. Reduce heat and simmer until tender, about 15 to 20 minutes.
  2. Drain and cool: Drain the potatoes and let them cool until easy to handle.
  3. Dice the potatoes: Peel (if desired) and cut the potatoes into bite-sized cubes.
  4. Mix the dressing: In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  5. Add the diced potatoes, celery, red onion, and chopped eggs to the dressing.
  6. Combine gently: Stir the mixture carefully to keep the potatoes intact.
  7. Adjust seasoning: Taste and add more salt, pepper, or vinegar as preferred.
  8. Garnish and chill: Sprinkle paprika on top and chill in the refrigerator for at least 30 minutes before serving.
