- 2 pounds potatoes
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 cup celery, diced
- 1/2 cup red onion, diced
- 3 hard-boiled eggs, chopped
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Boil the potatoes: Place the potatoes in a large pot, fill with cold water, add salt, and bring to a boil. Reduce heat and simmer until tender, about 15 to 20 minutes.
- Drain and cool: Drain the potatoes and let them cool until easy to handle.
- Dice the potatoes: Peel (if desired) and cut the potatoes into bite-sized cubes.
- Mix the dressing: In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Add the diced potatoes, celery, red onion, and chopped eggs to the dressing.
- Combine gently: Stir the mixture carefully to keep the potatoes intact.
- Adjust seasoning: Taste and add more salt, pepper, or vinegar as preferred.
- Garnish and chill: Sprinkle paprika on top and chill in the refrigerator for at least 30 minutes before serving.
Notes
For best flavor, let the salad chill overnight. Customizations include adding bacon, herbs, or pickles.
