- 12 Lasagna Noodles
- 1 cup Chopped Shrimp
- 1 cup Crab Meat
- 15 oz Ricotta Cheese
- 24 oz Alfredo Sauce
- 2 cups Shredded Mozzarella Cheese
- 1 cup Grated Parmesan Cheese
- 3 cloves Minced Garlic
- to taste Salt
- to taste Pepper
- 2 tablespoons Fresh Parsley
Instructions
- Cook the lasagna noodles in boiling water until al dente, then drain and rinse.
- Prepare the filling by mixing shrimp, crab meat, ricotta, garlic, salt, and pepper in a bowl.
- Preheat your oven to 350°F (175°C).
- Assemble the roll-ups by spreading filling on each noodle and rolling them tightly.
- Add Alfredo sauce on the bottom of a baking dish, then place roll-ups seam side down.
- Cover the roll-ups with remaining Alfredo sauce and sprinkle mozzarella and Parmesan on top.
- Bake covered with foil for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
- Garnish with parsley and serve warm.
Notes
These roll-ups can be prepared ahead of time and stored in the fridge before baking. Serve with a light salad or garlic bread.
