- 2 lbs Boneless, skinless chicken breasts
- 2 tbsp Olive oil (for searing)
- 1 large Onion (sliced)
- 4 cloves Garlic (minced)
- 1 cup Chicken broth (use low-sodium if preferred)
- 1/2 cup Soy sauce (opt for tamari for a gluten-free option)
- 1/4 cup Honey
- 2 tbsp Dijon mustard
- 1 tsp Smoked paprika
- 1 tsp Dried thyme
- 1 tsp Salt (adjust to taste)
- 1/2 tsp Black pepper
- 2 tbsp Cornstarch (for thickening)
- 1/4 cup Water (for dissolving cornstarch)
- 1 tbsp Fresh parsley (chopped, for garnish)
Instructions
- Sear the chicken: Pour olive oil into a skillet over medium-high heat. Let it warm until shimmering. Add the chicken breasts and sear until golden brown, about 4 minutes on each side.
- Move to crockpot: Carefully transfer the seared chicken to your crockpot.
- Sauté onion and garlic: In the same skillet, add the sliced onion and minced garlic. Sauté for 3-5 minutes until fragrant and translucent.
- Combine ingredients: Pour the onion-garlic mixture over the chicken in the crockpot.
- Make the sauce: In a bowl, whisk together chicken broth, soy sauce, honey, and Dijon mustard, then add smoked paprika, dried thyme, salt, and black pepper.
- Add sauce to crockpot: Pour the sauce over the chicken and onions in the crockpot.
- Cook: Place the lid on the crockpot and set it to cook on low for 360 minutes (6 hours).
- Thicken the sauce (optional): Mix cornstarch with water and add to the crockpot about 30 minutes before serving.
- Garnish: Before serving, sprinkle with freshly chopped parsley.
Notes
For variation, try substituting honey with citrus juice or BBQ sauce for different flavors.
