  • 1 large Onion (sliced)
  • 4 cloves Garlic (minced)

  • 1/2 cup Soy sauce (opt for tamari for a gluten-free option)
  • 1/4 cup Honey
  • 2 tbsp Dijon mustard
  • 1 tsp Smoked paprika
  • 1 tsp Dried thyme
  • 1 tsp Salt (adjust to taste)
  • 1/2 tsp Black pepper
  • 2 tbsp Cornstarch (for thickening)
  • 1/4 cup Water (for dissolving cornstarch)
  • 1 tbsp Fresh parsley (chopped, for garnish)

Instructions

  1. Sear the chicken: Pour olive oil into a skillet over medium-high heat. Let it warm until shimmering. Add the chicken breasts and sear until golden brown, about 4 minutes on each side.
  2. Move to crockpot: Carefully transfer the seared chicken to your crockpot.
  3. Sauté onion and garlic: In the same skillet, add the sliced onion and minced garlic. Sauté for 3-5 minutes until fragrant and translucent.
  4. Combine ingredients: Pour the onion-garlic mixture over the chicken in the crockpot.
  5. Make the sauce: In a bowl, whisk together chicken broth, soy sauce, honey, and Dijon mustard, then add smoked paprika, dried thyme, salt, and black pepper.
  6. Add sauce to crockpot: Pour the sauce over the chicken and onions in the crockpot.
  7. Cook: Place the lid on the crockpot and set it to cook on low for 360 minutes (6 hours).
  8. Thicken the sauce (optional): Mix cornstarch with water and add to the crockpot about 30 minutes before serving.
  9. Garnish: Before serving, sprinkle with freshly chopped parsley.
