Description

Quick and healthy dish with zucchini and mushrooms, sautéed in garlic and soy sauce.


Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 8 oz cremini or button mushrooms, sliced
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce

Instructions

  1. Start by washing your zucchinis. Slice them into half-moons about 1/4 inch thick.
  2. Next, give your mushrooms a quick wipe with a damp paper towel to remove any dirt. Slice them for cooking.
  3. In a large skillet, drizzle in the olive oil and warm it over medium heat until it shimmers invitingly.
  4. Toss in the minced garlic and let it sauté for about a minute until fragrant.
  5. Add the zucchini slices to the pan, cooking for about five minutes.
  6. Now, stir in the sliced mushrooms and soy sauce, cooking for another five minutes.
  7. Gently transfer the medley to plates and serve.
