Ingredients

- 2 medium zucchinis, sliced into half-moons
- 8 oz cremini or button mushrooms, sliced
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 2 tbsp soy sauce
Instructions
- Start by washing your zucchinis. Slice them into half-moons about 1/4 inch thick.
- Next, give your mushrooms a quick wipe with a damp paper towel to remove any dirt. Slice them for cooking.
- In a large skillet, drizzle in the olive oil and warm it over medium heat until it shimmers invitingly.
- Toss in the minced garlic and let it sauté for about a minute until fragrant.
- Add the zucchini slices to the pan, cooking for about five minutes.
- Now, stir in the sliced mushrooms and soy sauce, cooking for another five minutes.
- Gently transfer the medley to plates and serve.
Notes
Feel free to add fresh herbs or cheese for extra flavor.
