A quick and delicious chicken quesadilla recipe that combines tender chicken, melted cheese, and colorful veggies, perfect for busy weeknights or gatherings.

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)
- 4 large flour tortillas
- 1/2 cup bell peppers, sliced
- 1/2 cup onions, sliced
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- Olive oil for cooking
- Sour cream and salsa for serving (optional)
Instructions
- Sauté the Vegetables: In a skillet over medium heat, add a little olive oil. Once the oil is hot, add the sliced onions and bell peppers. Sauté them for about 5-7 minutes until they are tender and the onions start to become translucent.
- Mix the Filling: While the vegetables are cooking, take a mixing bowl. Combine the shredded chicken, sautéed onions, and bell peppers. Add in cumin, garlic powder, salt, and pepper. Mix everything well to ensure the spices spread evenly throughout the chicken and veggies.
- Prepare the Quesadilla: Place one tortilla in the skillet (you may need to add a little more olive oil). Sprinkle a portion of shredded cheese over the tortilla. Then, add a portion of the chicken and veggie mixture on top and add a little more cheese. Finally, cover it with another tortilla.
- Cook the Quesadilla: Cook the quesadilla for 3-4 minutes until the bottom tortilla is golden brown. Carefully flip the quesadilla using a spatula and cook the other side for another 3-4 minutes until golden and the cheese has melted.
- Repeat: Repeat steps 3 and 4 with the remaining tortillas and filling. You can make two or more quesadillas at a time, depending on the size of your skillet.
- Slice and Serve: Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Use a sharp knife or pizza cutter to slice it into wedges. Serve warm with sour cream and salsa on the side.
