Ingredients

2 tbsp cocoa powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup buttermilk

1 tsp red food coloring

4 oz semi-sweet chocolate (cut into squares)

Cream cheese frosting or powdered sugar for topping (optional)


Instructions

1. Preheat oven to 375°F (190°C) and line a muffin tin with cupcake liners.

2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.

3. In another bowl, beat butter and sugar until light and fluffy.

4. Add eggs one at a time, followed by vanilla and red food coloring.

5. Alternate adding dry ingredients and buttermilk until smooth.

6. Fill each liner halfway with batter, place a chocolate square in the center, and cover with more batter.

7. Bake for 12–14 minutes, until edges are set but centers are still soft.

8. Let cool slightly before serving to keep the molten center intact.

9. Top with cream cheese frosting or a dusting of powdered sugar.
