Description

Elegant, velvety, and totally irresistible — these Red Velvet Crêpes are a stunning twist on the classic French favorite! Soft, buttery crêpes with a hint of cocoa are paired with a luscious cream cheese filling for a dessert (or breakfast!) that looks as good as it tastes.


Ingredients

Scale

1 cup all-purpose flour

2 tbsp cocoa powder

2 tbsp granulated sugar

1/4 tsp salt

1 1/4 cups milk

2 large eggs

2 tbsp melted butter

1 tsp vanilla extract

12 tsp red food coloring (gel preferred)

For the cream cheese filling:

4 oz cream cheese, softened

1/2 cup powdered sugar

1/2 cup whipped cream or whipped topping

1/2 tsp vanilla extract

Optional toppings:

Fresh berries, chocolate shavings, powdered sugar, or melted chocolate drizzle


Instructions

1. In a blender, combine flour, cocoa powder, sugar, salt, milk, eggs, melted butter, vanilla, and red food coloring.

2. Blend until smooth, then refrigerate batter for at least 30 minutes to rest.

3. Heat a lightly greased nonstick skillet over medium heat.

4. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.

5. Cook for 1–2 minutes until edges lift slightly, then flip and cook another 30 seconds.

6. Repeat with remaining batter, stacking crêpes with parchment paper between them.

7. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.

8. Fold in whipped cream until light and fluffy.

9. Spread or pipe filling onto each crêpe, then roll or fold into quarters.

10. Top with berries, powdered sugar, or a drizzle of chocolate before serving.

Notes

Make the crêpes ahead and store them in the fridge for up to 2 days.

Try chocolate ganache or mascarpone filling for indulgent twists.

For a breakfast version, fill with strawberries and Greek yogurt.
