Description

A delicious and hearty vegetarian lasagna filled with layers of cheese, vegetables, and a rich tomato sauce.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Spread 1 cup of marinara sauce at the bottom of a baking dish.
  4. Layer 3 lasagna noodles over the sauce.
  5. Spoon 1/3 of the ricotta mixture, followed by 1/3 of the spinach, and 1/3 of the mozzarella cheese.
  6. Repeat the layers twice more, ending with mozzarella on top.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake for another 15 minutes until cheese is bubbly.
  9. Let it cool for 10 minutes before serving.

Notes

For extra flavor, add fresh basil or garlic to the ricotta cheese mixture.
