- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts with salt, pepper, oregano, and thyme.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked.
- Remove chicken from the skillet and set aside.
- In the same skillet, add bell peppers, zucchini, broccoli, and garlic. Sauté for about 5-7 minutes or until vegetables are tender.
- Slice the cooked chicken and add it back to the skillet with the vegetables.
- Toss everything together to warm through and serve hot.
