Description

Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Boil a large pot of salted water and cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat for 1 minute.
  3. Sauté minced garlic for 1 minute, stirring constantly until fragrant.
  4. Add the diced tomatoes (with juice) to the skillet and mix well. Season with salt and pepper and let simmer for 5 minutes.
