- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup shredded cheese (mozzarella or cheddar)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Boil a large pot of salted water and cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat for 1 minute.
- Sauté minced garlic for 1 minute, stirring constantly until fragrant.
- Add the diced tomatoes (with juice) to the skillet and mix well. Season with salt and pepper and let simmer for 5 minutes.
- Combine the drained pasta with the tomato mixture in the skillet and toss together.
- Add the shredded cheese off the heat and stir until melted and well blended.
- Garnish with fresh basil or parsley before serving.
