Instructions
- In a mixing bowl, combine the oats, pumpkin puree, nut butter, honey or maple syrup, pumpkin pie spice, vanilla extract, and salt. Stir the mixture until it’s well combined and sticky.
- Use your hands to take small portions of the mixture and roll them into balls that are about 1 inch in diameter.
- Place the energy bites on a parchment-lined baking sheet or a plate. Refrigerate for at least 30 minutes to firm up.
