Ingredients

  • 1 cup oats
  • 1/2 cup pumpkin puree
  • 1/4 cup nut butter (almond, peanut, or cashew)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine the oats, pumpkin puree, nut butter, honey or maple syrup, pumpkin pie spice, vanilla extract, and salt. Stir the mixture until it’s well combined and sticky.
  2. Use your hands to take small portions of the mixture and roll them into balls that are about 1 inch in diameter.
  3. Place the energy bites on a parchment-lined baking sheet or a plate. Refrigerate for at least 30 minutes to firm up.
