- 4 chicken breasts
- 2 cups crushed pretzels
- 1 cup cheddar cheese, shredded
- 1/2 cup mustard
- 2 eggs
- 1/4 cup flour
- Salt and pepper to taste
- Olive oil or cooking spray
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, mix together the mustard and shredded cheddar cheese for the sauce.
- Prepare two shallow bowls; beat the eggs in one and mix flour with salt and pepper in the other.
- Coat each chicken breast in the flour mixture, then dip in the eggs, and finally roll in the crushed pretzels.
- Place the coated chicken breasts on a baking sheet, lightly spray with olive oil if desired.
- Bake for 25-30 minutes until golden brown and cooked to an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes before serving with the mustard-cheddar sauce on the side.
Notes
For a healthier option, use whole wheat pretzels or crushed almonds. Substitute chicken thighs for juicier meat.
