Ingredients
1 box pistachio pudding mix
1 box white or yellow cake mix
4 large eggs
1 cup vegetable oil
1 cup milk
1 tsp vanilla extract
1/2 cup chopped pistachios
Optional: green food coloring
Pistachio or cream cheese frosting for topping
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan or two round cake pans.
2. In a large bowl, combine cake mix and pistachio pudding mix.
3. Add eggs, oil, milk, and vanilla extract.
4. Beat until smooth and well combined.
5. Fold in chopped pistachios and food coloring if using.
6. Pour batter into prepared pan(s).
7. Bake for 30–35 minutes until a toothpick inserted comes out clean.
8. Cool completely before frosting.
9. Spread frosting evenly over the cake and garnish with additional pistachios if desired.
Notes
Instant pistachio pudding gives the cake extra moisture.
Do not overmix once the batter is smooth.
