- 1 lb ground beef
- 1 packet taco seasoning
- 1 can diced tomatoes with green chilies
- 2 cups tortilla chips
- 2 cups shredded cheddar cheese
- 1 can black beans (rinsed and drained)
- 1 cup corn (frozen or canned)
- 1 cup sour cream
- Green onions for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat until fully cooked, breaking it into small crumbles.
- Add taco seasoning and diced tomatoes with green chilies. Simmer for a few minutes to meld flavors.
- Layer half of the tortilla chips in a baking dish, followed by half of the beef mixture, black beans, corn, and half of the cheese.
- Repeat the layering with the remaining ingredients.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Add sour cream and chopped green onions on top before serving.
Notes
For a healthier option, use lean ground beef or turkey. You can also customize the cheese type and add vegetables for extra nutrition.
