Description

A delightful Tex-Mex casserole dish that’s perfect for family dinners or casual get-togethers. Warm, cheesy, and satisfying.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 2 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 can black beans (rinsed and drained)
  • 1 cup corn (frozen or canned)
  • 1 cup sour cream
  • Green onions for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat until fully cooked, breaking it into small crumbles.
  3. Add taco seasoning and diced tomatoes with green chilies. Simmer for a few minutes to meld flavors.
  4. Layer half of the tortilla chips in a baking dish, followed by half of the beef mixture, black beans, corn, and half of the cheese.
  5. Repeat the layering with the remaining ingredients.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.
  7. Add sour cream and chopped green onions on top before serving.

Notes

For a healthier option, use lean ground beef or turkey. You can also customize the cheese type and add vegetables for extra nutrition.
