Ingredients
12 oz pasta (penne, rotini, or spaghetti)
1 lb boneless, skinless chicken breast, cubed
2 tbsp olive oil
3 garlic cloves, minced
1/2 cup basil pesto (store-bought or homemade)
1/2 cup heavy cream (optional for creamy version)
1/2 cup grated Parmesan cheese
1 cup cherry tomatoes, halved (optional)
Salt and pepper to taste
Fresh basil or parsley for garnish
Instructions
1. Cook pasta in salted boiling water according to package directions. Reserve 1/2 cup pasta water and drain.
2. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium heat and cook chicken until golden and cooked through, about 6–7 minutes. Remove and set aside.
