- 3 ripe peaches, sliced
- 1/4 cup bourbon
- 1/2 cup brown sugar
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a small saucepan, melt the unsalted butter over medium heat. Stir in the brown sugar and bourbon until smooth and bubbly. Pour this mixture into a 9-inch round cake pan and arrange the sliced peaches on top.
- In a large bowl, cream together the granulated sugar and remaining butter until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, mix the flour, baking powder, baking soda, salt, and ground cinnamon. Gradually add this dry mixture to the creamed mixture until just combined.
- Pour the batter over the peaches and caramel in the cake pan.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let the cake cool for 5-10 minutes, then carefully invert onto a serving plate. Serve warm or at room temperature.
