Description

Ingredients

  • 3 ripe peaches, sliced
  • 1/4 cup bourbon
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small saucepan, melt the unsalted butter over medium heat. Stir in the brown sugar and bourbon until smooth and bubbly. Pour this mixture into a 9-inch round cake pan and arrange the sliced peaches on top.
  3. In a large bowl, cream together the granulated sugar and remaining butter until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In another bowl, mix the flour, baking powder, baking soda, salt, and ground cinnamon. Gradually add this dry mixture to the creamed mixture until just combined.
  6. Pour the batter over the peaches and caramel in the cake pan.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Let the cake cool for 5-10 minutes, then carefully invert onto a serving plate. Serve warm or at room temperature.
