Ingredients

1 tsp baking powder

1/2 tsp baking soda

1/4 cup brown sugar

2 large eggs

1 tbsp grated fresh ginger

Zest of 1 orange

1/4 cup orange juice

1/4 cup milk

For the glaze:

1 cup powdered sugar

2 tbsp orange juice

1 tsp honey

Optional garnish: candied orange peel or crystallized ginger


Instructions

1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or mini bundt pan.

2. In a bowl, whisk together flour, baking powder, baking soda, salt, ginger, and cinnamon.

3. In another bowl, beat butter, honey, and brown sugar until creamy.

4. Add eggs one at a time, followed by grated ginger and orange zest.

5. Mix in orange juice and milk.

6. Gradually add dry ingredients, mixing just until combined.

7. Divide batter evenly among prepared cups.

8. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.

9. Cool for 10 minutes before transferring to a wire rack.

10. Whisk together glaze ingredients and drizzle over cooled cakes.

11. Top with candied orange peel or crystallized ginger for a beautiful finish.

Notes

For extra flavor, add a teaspoon of orange extract or swap honey for maple syrup.
