Ingredients

  • 1 cup orzo pasta
  • 4 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 1/4 cup lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • 3 cloves garlic (minced)
  • 2 cups spinach (fresh)
  • 1/2 cup Parmesan cheese (grated)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Cook the diced chicken breast until golden brown and no longer pink, about 5-7 minutes.
  3. Add minced garlic to the pot and let it sizzle for about 1 minute.
  4. Pour in the chicken broth and bring it to a boil.
  5. Lower the heat and add the orzo pasta, stirring gently, and let it simmer for about 10 minutes.
  6. Stir in the heavy cream, lemon juice, and lemon zest until well combined.
  7. Add fresh spinach and grated Parmesan cheese, allowing the spinach to wilt and cheese to melt.
  8. Season with salt and pepper to taste.
  9. Serve warm, topped with extra Parmesan and fresh herbs if desired.
