Ingredients

  • 8 oz pasta (penne or rotini)
  • 12 oz smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the sliced sausage over medium heat until browned. Set aside.
  2. Add diced onion and bell pepper, cooking until softened.
  3. Stir in minced garlic and cook for another minute.
  4. Add the chicken broth, heavy cream, Cajun seasoning, and pasta. Bring to a boil.
  5. Reduce heat and simmer, stirring occasionally, until pasta is cooked and sauce thickens, about 10-12 minutes.
  6. Return the sausage to the pot and stir to combine. Season with salt and pepper.
  7. Garnish with chopped parsley before serving.
