- 8 oz pasta (penne or rotini)
- 12 oz smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté the sliced sausage over medium heat until browned. Set aside.
- Add diced onion and bell pepper, cooking until softened.
- Stir in minced garlic and cook for another minute.
- Add the chicken broth, heavy cream, Cajun seasoning, and pasta. Bring to a boil.
- Reduce heat and simmer, stirring occasionally, until pasta is cooked and sauce thickens, about 10-12 minutes.
- Return the sausage to the pot and stir to combine. Season with salt and pepper.
- Garnish with chopped parsley before serving.
Notes
For spicier options, use Andouille sausage or hot Cajun seasoning. Can add vegetables like spinach or zucchini.
