- 2 cups orzo pasta
- 4 chicken thighs or breasts
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare a large oven-safe pan. Heat the olive oil over medium heat and add the minced garlic. Cook until fragrant, about 1 minute.
- Cook the chicken pieces in the pan, seasoning with salt and pepper. Brown on both sides for about 5-7 minutes.
- Add the orzo pasta and chicken broth. Pour in the lemon juice and zest, then stir everything to combine.
- Bring the mixture to a simmer, allowing small bubbles to form.
- Bake in the preheated oven for about 20-25 minutes, until the chicken is cooked through and orzo is tender.
- Garnish with fresh parsley, if desired, and serve.
Notes
For variations, consider adding spinach, bell peppers, or cherry tomatoes to the dish. Adjust seasoning to your taste.
