Description

A quick and delicious meal combining savory kielbasa with colorful veggies and a sweet honey garlic sauce, perfect for busy families.


Ingredients

Scale
  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce
  • 1 each Bell Pepper (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Wash and cut vegetables: slice bell peppers into strips and chop baby potatoes in half.
  2. Cut kielbasa into bite-sized pieces.
  3. Mix honey, minced garlic, and soy sauce in a small bowl.
  4. Heat olive oil in a large skillet over medium heat and sauté kielbasa for 5-7 minutes until browned.
  5. Add bell peppers and baby carrots; stir and cook for 5 minutes.
  6. Add halved baby potatoes and mix.
  7. Pour honey garlic sauce over the mixture, stir to coat, and cover.
  8. Cook on medium-low for 15-20 minutes, stirring occasionally, until potatoes are tender.
  9. Garnish with fresh parsley or green onions and serve.

Notes

Leftovers can be stored in an airtight container for 3-4 days. Consider adding spices for extra flavor.
