- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic (minced)
- 2 tablespoons Soy Sauce
- 1 each Bell Pepper (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Wash and cut vegetables: slice bell peppers into strips and chop baby potatoes in half.
- Cut kielbasa into bite-sized pieces.
- Mix honey, minced garlic, and soy sauce in a small bowl.
- Heat olive oil in a large skillet over medium heat and sauté kielbasa for 5-7 minutes until browned.
- Add bell peppers and baby carrots; stir and cook for 5 minutes.
- Add halved baby potatoes and mix.
- Pour honey garlic sauce over the mixture, stir to coat, and cover.
- Cook on medium-low for 15-20 minutes, stirring occasionally, until potatoes are tender.
- Garnish with fresh parsley or green onions and serve.
Notes
Leftovers can be stored in an airtight container for 3-4 days. Consider adding spices for extra flavor.
